The 2011 XII Subirat Parent Mata comes from 100% Subirat Parent vines planted at 690 meters. It has a very neutral nose with traces of wax resin, pine cones and lanolin. The palate is well-balanced with tropical fruit, guava and honeycomb on the entry, crisp acidity and an intense nectarine finish that has a curious, almost Brie-like note. It is a bit of an oddball to be honest, but charming nonetheless. Drink now-2014.
Although Agusti Torello was founded in 1950, this estate sold its Cava to other producers for twenty or thirty years before taking the plunge and bottling themselves. Their philosophy and tagline is: “Cava with soul,” something sceptics might smirk at, at least until they taste them. All fruit is sourced from Penedes from organically cultivated vines and they concentrate upon Reserva and Gran Reserva only.
