The pricier bottlings start with the 2007 Bayanus Reserva Brut Nature available only in 375-ml bottles. The fruit was sourced from vines with a minimum of 60 years of age. It displays a bit more aromatic complexity, a round, smooth texture, excellent depth of flavor, and a lengthy, fruit-filled finish. Drink it over the next 2-3 years. Agusti Torello Mata is one of Spain’s finest Cava producers. The 2005 Bayanus Reserva Brut Nature comes only in half-bottles. It offers a persistent stream of small bubble, apple, pear, and biscuit aromas, and superior depth on the palate. The Agusti Torello Mata Cavas rank with the best I have tasted. Eighty percent of the production is sold in Spain; only 20% is exported. They are all vintage dated and have the disgorgement date on the back label.
