The 2007 Cabernet Sauvignon McKinley Springs is opaque purple with an enticing nose of wood smoke, Asian spices, a hint of balsamic, violets, black currant, and blackberry. This is followed by a medium to full-bodied wine with layers of spicy fruit, succulent flavors, excellent volume, and enough structure to evolve for another 3-4 years. This lengthy effort’s drinking window extends from 2013 to 2022. Cor Cellars, located in the Columbia Gorge region, started operations in 2005.www.corcellars.com

The nose hints at ripe scents of prune and brown sugar, along with olive, eucalyptus and lemon oil. Winemaker Luke Bradford cofermented the Cab with a small amount of Sauvignon Blanc to up the acid naturally, and it works pretty well.
