Offering up aromas of apples, peaches, white flowers and wheat toast, the 2018 Chablis 1er Cru Vaillon is medium to full-bodied open-knit and fleshy, with a rich core of fruit, ripe acids and a saline finish.

The 2017 Chablis 1er Cru Vaillon is showing well, unwinding in the glass with a pretty bouquet of fresh peach, citrus blossom, blanched almonds, smoke and fresh pastry. On the palate, it's medium to full-bodied, satiny and elegant, displaying promising tension and youthful reserve, concluding with a pure and precise finish.

A musky, exotic bouquet of peaches, white pepper, rose petals and spices introduces the 2016 Chablis 1er Cru Vaillon—as Fabien Moreau and I joked, "We could be in Alsace." On the palate, the wine is medium to full-bodied, satiny and open-knit, with a tangy, saline finish. While it's exuberant on the nose, it remains quite restrained in the mouth.

The 2015 Chablis 1Er Cru Vaillons has a crisp Granny Smith apple and fresh pear scent, very harmonious and with commendable purity. The palate is very cohesive with a slight oyster shell note on the entry. The acidity is well judged with lemon peel and a touch of white peach on the finish. This is a delicious Vaillons that has the edge over the 2014 at the moment.
