The 2007 Private Collection Cabernet Sauvignon is raised for 12 months in new French oak and has a very introverted bouquet of small dark cherries, briars and mint. The entry?is very smooth with sweet red cherries, wild strawberry and vanilla, leading to a very polished but yet again, oak-laden finish. Drink 2012-2016. Located on the Kuils River, the Saxenburg farm estate consists of over 200-hectares of which 90-hectares are under vine. Since 1990, Nico van der Merwe has been winemaker, traveling between Stellenbosch and South of France, where he also makes wine. The emphasis here is on classic French grape varieties: Shiraz, Merlot Chardonnay and Sauvignon Blanc.
