The 2007 Cabernet Sauvignon, is a multi-regional blend sourced from 5 vineyards. Made up of 82% Cabernet Sauvignon, 8% Cabernet Franc with the balance Malbec, Merlot, and Petit Verdot, it was aged for 23 months in 50% new French oak. Purple in color with aromas of spice box, olives, herbs, and black currant, on the palate it is structured for the long haul. It has plenty of fruit and fine grained tannin for balance, excellent volume, and savory flavors. Give it 5-6 years of cellaring and drink it from 2015 to 2027. Owner/winemaker Justin Wylie’s story, while not quite Horatio Alger-like, involves purchasing a wheat field and within a decade building it into a thriving vineyard and winery.
