There is no secret to making fine wine - low yields, old vineyards, sanitary cellars, and non-interventionist winemaking do indeed work wonders. Maurice and Claude Dugat produced highly successful 1991s. The 1991 Gevrey-Chambertin-Lavaux St.-Jacques shares the same sweetness and excellent color, but it does not possess the aromatic or flavor dimensions of the Gevrey-Chambertin-Premier Cru.
