The 2011 Brunello di Montalcino Paolus is a shapely and opulent wine from an aromatic point of view. The bouquet opens to dark cherry, blackberry, spice, leather and cola. Like many other wines from this vintage, the mouthfeel is lighter and less impactful overall. But it does exhibit the kind of integrated acidity that makes this wine perfect for pasta or meat dishes.
