The 2007 Cabernet Sauvignon Signature exhibits a dense ruby/purple color along with sweet tannin, lots of blueberry, boysenberry and black currant fruit, a hint of spring flowers, a medium to full-bodied texture, and a supple, seamless personality. It should drink well for 15 or more years.
Old timers (including this geezer) have long known that one of the most compelling, riveting, world-class Cabernet Sauvignons ever made in California was Chappellet’s 1969, which was made by the legendary, now reclusive Philip Togni. As evidenced by anyone who visits the region, Pritchard Hill is now a mountainside covered with vines. However, Chappellet was among the first estates to establish a presence in this region.
