There was high levels of CO2 (a natural by-product of malolactic fermentation) in Jadot's medium-to-dark ruby-colored 1997 Vosne-Romanee Les Beauxmonts when it was tasted, rendering its fruit somewhat compressed. Raspberries, cherry cola, and cedar were evident in its aromatics. Its silky-textured, medium-bodied personality is complex, powerfully flavored, and persistent. As this mocha-covered cherry-flavored wine completes its elevage and is degassed it should gain body, richness, and depth. Anticipated maturity: 2000-2007.
