1994 is a terrific vintage for Dr. Parce, as evidenced by his quartet of sensational Collioures. The 1994 Collioure Les Junquets (200 cases produced) is made from an intriguing blend of 90% Syrah and 10% Roussanne. It is an astonishing example of just how marvelous these Collioures can be. From a hilltop vineyard planted in fragmented schistous soil, this enormously-endowed, black/purple-colored wine reveals a complex nose of vanillin, black fruits, damp, foresty scents, and a touch of pepper. With fabulous depth, structure, purity, and intensity as well as tannin, this wine needs at least 5-6 years of cellaring, but should age effortlessly for two decades. These four Collioures all require cellaring, but they will offer compelling drinking for up to twenty years. As is the practice of Dr. Parce, all four wines were bottled without fining or filtration, so expect a heavy sediment to form after 2-4 years.Vineyard Brands, Inc., Chester, VT; tel.
