The 2007 Viognier La Collina Tardi was picked at 40 Brix and fermented in old barrels. The nose has superb definition, very pure with honey, acacia, a touch of nectarine and a little spice. The palate is viscous with layers of honeyed fruit but with the requisite acidity to cut through and leave the mouth fresh and eager for more. Very well balanced, touches of Clementine and just a faint kerosene note just on the finish. This is succinct late-harvest Viognier – bravissimo!
Winemaker Warren Gibson feels that 2007 is the best vintage for Bilancia since 2002 and that 2007 favors his whites due to the retention of aromatics and good natural acidity.
