Former Chateauneuf-du-Pape rugby play?ers Claude Fonquerle and Philippe Cam?bie started this Minervois winery in 2002, Claude takes care of day-to-day manage?ment, while Philippe is in Chateauneuf, where he continues to advise on winemak?ing. In just a few years, Oustal Blanc has wowed leading restaurateurs with its pre?cise, fresh, and thoroughbred range of wines. The table wines, unfettered by AOC regulations, allow themselves a few tasty deviations-a demonstration of impressive skills that we see transformed in the AOC offerings.
