The 2007 CLA ROR is a biodynamic Cava that contains 10% Chardonnay with 30 months on lees. A sophisticated aroma of green apple, mineral, brioche, and baking spices compose the bouquet of this impeccably proportioned Cava. Round, mouth-filling, and lengthy, this is a classy Cava that will provide pleasure over the next 2-3 years. The 2006 CLA ROR is made up of 45% Xarel-lo, 35% Macabeo, and 20% Parellada sourced from an 11 acre biodynamically farmed estate parcel. The name of this cuvee comes from the word “claror” which means purity. It offers up a minerally/earthy nose along with biscuit and white fruit aromas. It has excellent mouth-filling volume, good depth and concentration, and a smooth, flavorful finish. This outstanding Cava should be consumed over the next 2-3 years.
