The 2010 Seven Hills Vineyard is a blend of 69% Cabernet Sauvignon, 25% Merlot and 6% Cabernet Franc that was aged in 47% new French oak. A rock-solid, age-worthy Bordeaux blend, it offers up a classic feel with copious blackberry, leafy herbs, spiced meats and graphite along with a medium to full-bodied, balanced palate. Firming up substantially on the finish, with a wealth of tannin, it needs to be forgotten for 3-4 years. Drink 2016-2025.
Focusing on estate fruit from Pepper Bridge, Seven Hills and Les Collines Vineyards, Pepper Bridge Winery is located in the middle of the Walla Walla Valley AVA, with the wines made by Swiss Jean-Francois Pellet. While the Merlot is relatively up-front and approachable, the Cabernet Sauvignon and single vineyard efforts will all benefit from cellar time and are not for the tannin averse.
