The top of the range in reds is this Bordeaux blend of Cabernet Sauvignon with 35% Cabernet Franc and 10% Merlot from their vineyards pruned in the Smart-Dyson system. The 2011 Hipperia aged for 12 months in French oak barrels. This is the big brother of the Petit Hipperia–the name says it all–combining the herbal aromas with classical blackberries, while a little riper, more concentrated and creamier. The palate is medium to full-bodied, with good weight of fruit and a special freshness. It has minty flavors and is supple and tasty, ending almost salty with an umami-like sensation. 23,000 bottles.
