I had two vintages of the top red to compare, the 2014 Hipperia from a cooler year, and the riper 2015. In the cooler years they use more Merlot, and here the final varietal composition was 45% Cabernet Sauvignon, 38% Cabernet Franc, 16% Merlot and 1% Petit Verdot, all fermented separately with different selected yeasts and aged in French barrels for one year. It has a serious balsamic nose with those herbal and pyrazine notes intermixed with blackberries and cedar wood. It could pass for a Bordeaux. The palate is nicely balanced with good freshness and polished tannins. 25,592 bottles and some larger formats were filled in June 2016.
